Easy Peanut Butter Parfait Recipe

When it comes to creating desserts for my diet, it really comes down to creativity. This creativity is used in conjunction with a knowledge of foods that the taste buds prefer, as well as the recognition of low sugar and carbohydrates. Most would think that such dessert items do not exist, however they are more common now than ever before. In fact, new versions of popular sweet items are being produced all of the time. This doesnt just pertain to the topic of desserts either. So for this recipe, the ingredients are sugar free – surprise, surprise. This recipe is for a peanut butter parfait that has sugar free ingredients. One aspect that I monitor with regards to desserts like this one is carbohydrates. Often times a recipe calls for a great deal of sugar free items, but the number of carbohydrates are pretty high. That is why I eat them in moderation.

I like to consume diabetic desserts in moderation, that is, in small proportions. To be more specific, just enough tastiness to invigorate the taste buds. This recipe calls for sugar free vanilla ice cream, sugar free chocolate syrup, and some dry roasted peanuts. I make this peanut butter parfait to contain about the volume of a jello cup. That’s a small proportion, but still enough to get my chocolate/ice cream/peanut fix. I add the sugar free ice cream first. After adding a small scoop, I add a thin layer of sugar free chocolate syrup, then some peanuts, then another layer of ice cream, another thin layer of sugar free chocolate syrup, some more peanuts, and then a dab of sugar free whipped topping. That’s a pretty simple easy diabetic dessert that tastes really great. It’s also a great refresher for when my taste buds get bored of bland tasting meals.

It all starts with a great foundation. Yep, it is always better to build up knowledge from the ground up. It sounds really cheesy, but it actually works. The simple fact about it is that most people want an answer other than this. After learning about sugars and carbohydrates, it was easy as pie to discover great tasting desserts that fit my meal plan.

The first great dessert idea was actually not mine. Going through the store the other day, I was craving some hot cocoa and actually lucked out. There is now a sugar free brand of hot chocolate that works with my diabetes. I top it off with a dollop of sugar free/fat free whipped topping and it is hard to beat. A treat recipe like that is not only hard to beat any day of the year, but during the winter – it’s pure liquid gold on a cold day. Another easy diabetic recipe that has been popular with me over the years involves sugar free pudding. You see, I get a little chocolate craving ever once in a while. Now, I know that sugar/fat free chocolate pudding doesn’t sound that tasty, but it does. I can tell little difference and actually think that it tastes better than the real thing. Again, I add a little sugar/fat free whipped topping and a delicious easy diabetic dessert is ready for my eager taste buds. Can anyone guess where my next healthy treat recipe is going?
