Diabetic Banana Bread

For those of you that have been wondering, I am still around. I know that I have not been able to post in the past couple of months due to several reasons. Anyway, I am still around, still doing my thing. Yup, that means that I am still looking new great tasting desserts that are easy to make and work great with my diabetes. If some of the readers out there are new to this blog, then I will explain my story. I am a diabetic who used to have trouble eating the right foods and maintaining the right diet regiment for my diabetes. Let’s just say that I have always loved to eat great tasting foods. However, these foods were not the best for me. Once I found that I was a pre-diabetic I was advised to change my eating habits. For me this meant cutting out all of the great tasting desserts that melted in my mouth. I won’t lie, it was really tough for me and believe when I say that it is still really tough. It’s hard passing up some of the items on menus these days. If you haven’t noticed, fast food restaurants are all over the place displaying all kinds of great tasting foods.

Well, today I would like to discuss a new project of mine that I have been working on. Actually, this dessert is not one hundred percent mine. One of my aunts had made a loaf of banana bread that was delicious. I only had a small taste because I knew that it was chalked full of substances like sugar that I was supposed to be limiting. Well, the small piece of banana bread tasted awesome. Its not very often that you find a homemade easy diabetic dessert recipe that tastes better than any moist muffin that you’ve ever had. So lets just say that I was excited to say the least. My idea was to take the recipe and exchange the sugar with an artificial sweetener like splenda or equal. I knew that the carbohydrates would still be there so I would have to try to moderate how much I had at a time. I usually always eat things like this in very small proportions if I even decide to try them. However, I don’t necessarily know how it will turn out with the splenda or how much I will have to add. I plan on adding a few pictures and other posts if it turns out like the original. Thanks for reading. If you have a recipe that you would like to share, then be sure to do so.
